The Sweetest New Wedding Trend - Passed Desserts

"From donut walls to smore’s or carmel apple bar – desserts at weddings are always evolving! The possibilities are endless, but sometimes guests get so caught up in dancing the night away that they never end up back in their seats or swinging by the dessert station. Looking for an easy fix? We love the idea of incorporating passed desserts into the mix – which brings those yummy bites of goodness right to your guests!

 

Convenience is just one reason why you should consider passed desserts on your big day – the element of surprise is also tons of fun for guests. “Wondering what is coming next (just like during a good cocktail hour) can leave your guests feeling intrigued and excited.” Says Melissa Benson, Event Director/Owner of Eleven Courses.

 

But, the main reason we think passed desserts are so great is quality control . Our chefs finish creating each piece of sweet art and send it right out (it doesn’t hang out on the dessert station waiting for a mouth party!) “We can do more with frozen and temperamental components like semifreddos, foams or mousses, because they need to be eaten immediately. The approach of passed desserts really opens a lot doors for us a culinary artists“ – says Eleven Courses, Exec Chef & Owner, Jim Benson.

 

Milk Chocolate Tart

Dark Chocolate Cup, Rosemary, Puff Pastry

 

The chocolate tart is definitely classic, however this one was designed for the choc-o-holic. Although this dessert is mini, the flavor is HUGE with the dark and milk chocolate combination. The whipped cream on top adds the perfect creaminess to balance the rich flavors.

 

 

"Smores Cyclinders"

Graham Pearls, Milk Chocolate Marshmallow Mousse

 

These s’mores will really be having your guests wanting some more! This is an elevated take on the classic campfire dessert and can be passed with ease! Although s’mores are usually made in the summer, your guests can enjoy these at any time of the year. Ask your caterer to do a custom approach to their desserts, like adding pretty candy pearls in your wedding color(s)!

 

 

Golden Egg Dark Chocolate Mousse, Blueberry, Mango Discs.

 

Look for desserts that are as eco-friendly as they are beautiful . Served in real eggshells,

it doesn’t get more environmental friendly then this dessert."
